Weekends Are For...Hummus

Weekends are for doing something you love.



Weekends are for drinking hot chocolate.



Weekends are for enjoying a fluffy book just for fun.



Weekends are for drinking free lattes when you go with your dad to get his oil changed.



Weekends are for seeing one of your best (incredibly talented!!) friends in an very cool musical.



Weekends are for relaxing, sit-down breakfasts.



Weekends are for simple lunches.


Weekends are for chips and dip.


Red and White Hummus

adapted from Rachael Ray

1 15-oz can kidney beans
1 15-oz can cannellini (white kidney) beans
juice of half a lemon
2 cloves garlic, minced
dash salt
a few grinds pepper
drizzle olive oil, plus more for garnish
paprika, for sprinkling

Combine beans, lemon juice, garlic, salt, and pepper in a food processor and pulse until you have a paste.  With processor on, drizzle in a few tablespoons olive oil.  Scoop into a bowl and garnish with another swirl of oil if desired.  Sprinkle paprika on top and serve with tortilla chips and veggies for dipping.
